Vegan Lemon Loaf Cake

Hello hello hello!

Baking is something that has always been so therapeutic for me and something that has allowed me to use my creativity in the kitchen. I have discovered recently that making food for the people I care about is somewhat of a love language as I often struggle to express my emotions through speech or physical affection (can anyone else relate??)

That’s why I decided to try my hand at baking a vegan lemon loaf on Mother’s Day for my mum and it turned out pretty delicious…


You will need:

  • 275g of self-raising flour
  • 200g of golden caster sugar
  • 1 tsp of baking powder
  • 100ml of sunflower (or other vegetable) oil
  • 1 lemon zested and juiced.

For the icing…

  • 200g of icing sugar
  • The juice of a lemon
  • Decoration of your choice (I used raspberries and a gold dusting spray)

Preheat your oven to 200°c/180°c fan.

Add the dry ingredients: flour, sugar, baking powder, lemon zest; to a bowl and mix until combined.

Add the oil and lemon juice and mix again until smooth.

Pour the mixture into a greased or lined with baking paper loaf tin and bake for about 35 minutes or until a knife comes out clean.

Allow to cool fully before adding the icing.

To make the icing, sieve in the icing sugar and gradually add the juice of 1 lemon. Make sure the icing is not runny but rather thick so as it doesn’t run off the cake (use the lemon juice sparingly).

Once the icing is combined, pour or spoon it onto the fully cooled loaf and spread it on. I created a drip effect with mine which I quite liked.

Finally, decorate the cake how you like. Slice and enjoy. I recommend some (soya) whipped cream or ice cream!


It’s as easy as that.

Of course the decoration wasn’t perfect, but what Home baking is? I think that’s what makes it even more special to eat.

Mother’s Day in the UK may be over, but any of you US readers could use this for your celebrations next Sunday or even for Father’s Day in June. Alternatively, what’s stopping you from baking a cake ‘just because’? Lemon is a super fresh flavour for summer, so I’m sure I’ll be giving this another attempt soon… I’m dreaming of those flavours again…
